Chicken Chow Mein

Also works well if you replace the chicken with beef or prawns.

Ingredients

  • 150g dried yellow shi wheat flour noodles (or fresh egg noodles)
  • 300g skinless chicken breast fillet
  • 1 large spring onion chopped lengthwise
  • 1 red pepper thinly sliced and deseeded
  • 1 tbsp cornflour
  • dash of dark soy sauce
  • 1 tsp chinese 5 spice powder
  • 1 tbsp sesame oil
  • 2 tbsp groundnut oil (or stir fry oil)
  • 150g bean sprouts
  • 2 tbsp light soy sauce
  • 1 tsp chilli sauce (optional)
  • finely ground black pepper (optional)

Preparation

  1. Slice the spring onion lengthwise
  2. Slice the red pepper thinly
  3. Slice the chicken breast into strips

The Process

  1. Cook noodles according to packet instructions. Drain, rinse in cold water, drain again, then drizzle with a little sesame oil and toss through to prevent them sticking.
  2. Add the dark sauce soy and the 5 spice powder to the chicken. Mix thoroughly before coating in cornflour.
  3. Heat the wok and oil on high heat, until smoking. Add the chicken and cook through.
  4. Add the pepper and stir fry for a minute.
  5. Add the spring onion and bean sprouts and cook for under a minute.
  6. Add the noodles sesame oil and chilli sauce (if using) and black pepper (if using).
  7. Stir well and serve immediately.
