Pasta Puttanesca

Ingredients
- 250g pasta (penne or fusilli)
- 3 tbsp olive oil
- 2 cloves of garlic peeled and chopped
- 2 fresh red chillis deseeded and chopped
- 400g chopped tomatoes (drained?)
- 8 anchovy fillets finely chopped
- 150g black olives (pitted)
- 2 tbsp fresh chopped parsley
- 170g can of tuna flaked
- black pepper to taste
The Method
- In a pan lightly heat 2tbsp of olive oil and sweat the garlic and chilli (do not let the garlic burn!)
- Add the chopped anchovy fillets and the tomatoes and bring the sauce up to simmer for about 20 minutes. Add some black pepper to the sauce.
- While the sauce is simmering cook the pasta as directed on the packet. About halfway through cooking the pasta add some of the pasta water to the sauce.
- Add the olives and the tuna to the sauce and mix well, then add the drained pasta to the sauce. Finally add the chopped parsley.
