Pasta Puttanesca

Ingredients

  • 250g pasta (penne or fusilli)
  • 3 tbsp olive oil
  • 2 cloves of garlic peeled and chopped
  • 2 fresh red chillis deseeded and chopped
  • 400g chopped tomatoes (drained?)
  • 8 anchovy fillets finely chopped
  • 150g black olives (pitted)
  • 2 tbsp fresh chopped parsley
  • 170g can of tuna flaked
  • black pepper to taste

The Method

  1. In a pan lightly heat 2tbsp of olive oil and sweat the garlic and chilli (do not let the garlic burn!)
  2. Add the chopped anchovy fillets and the tomatoes and bring the sauce up to simmer for about 20 minutes. Add some black pepper to the sauce.
  3. While the sauce is simmering cook the pasta as directed on the packet. About halfway through cooking the pasta add some of the pasta water to the sauce.
  4. Add the olives and the tuna to the sauce and mix well, then add the drained pasta to the sauce. Finally add the chopped parsley.
