Prawn and Chorizo Frittata

Ingredients

  • half an onion finely chopped
  • 50g chorizo chopped
  • 1 tbsp milk
  • 2 tsp olive oil
  • 4 eggs lightly beaten
  • 85g prawns cooked and peeled
  • 100g frozen peas (defrosted)
  • leafy salad (to serve)

Preparation

  1. Chop the onion.
  2. Chop the chorizo.
  3. Beat the eggs. (while the onion and chorizo are frying)

The Process

  1. Heat grill to medium.
  2. In a 20cm frying pan, fry the onion and chorizo in the oil over a low heat, cook for 4-5 mins, stirring occasionally until the onion is soft.
  3. Take the pan off the heat, pour out the excess fat from the chorizo, then stir in the beaten eggs and milk with some seasoning.
  4. Stir in the prawns and peas and return to a low heat for 15-17 minutes, until all but the very top of the frittata is set.
  5. Flash it under the grill until golden.
