Tuna Arrabiatta Pasta Gratin

Ingredients

  • 1 tsp olive oil
  • 1 red and 1 yellow pepper sliced
  • 2 garlic cloves crushed
  • pinch of dried chillies
  • 2 x 400g cans chopped tomatoes
  • 50g mixed pitted olives chopped or whole optional
  • pinch caster sugar
  • 250g wholemeal pasta shapes
  • 2 x 200g cans of tuna in spring water drained and flaked
  • 25g fresh wholemeal breadcrumbs
  • 2 tbsp Parmesan

Preparation

  • Slice the red and yellow peppers
  • Crush the garlic cloves
  • Chop the olives (if desired).

The Process

  1. Heat oil in a large saucepan and fry the peppers for about 5 minutes until starting to caramelise.
  2. Add the garlic and chillies and cook for 30 seconds.
  3. Then tip in the tomatoes (and olives if using). Season, add a pinch of sugar and bring to the boil, then simmer, uncovered for 10 minutes.
  4. Meanwhile cook the pasta according to the pack instructions and heat the grill.
  5. Drain the pasta. Mix in the pasta and the tuna into the tomato sauce.
  6. Tip into a large ovenproof dish. Mix the breadcrumbs and parmesan together and scatter over the top.
  7. Grill for 3-4 minutes or until the topping is golden.
